Avocado filled with kefir and egg
Looking for ideas for a quick lunch or afternoon snack where you can use the milk kefir? This quick and easy to make recipe for avocado filled with kefir and egg can also be a nutritious breakfast or dinner dish.
This recipe includes not one but two ingredients that pass as a superfood: avocado and kefir. Rich with good fats its also great choice if you are following diet restrictions, like lchf or keto diet.
The runny egg yolk that oozes over avocado and combined gives a distinct savoury flavour is spiced up with kefir to get some freshness and much needed lightness.
Ingredients:
- 1 avocado
- 2 quail’s eggs
- 2 tbsp kefir
- olive oil
- freshly ground black pepper
- salt
Instructions:
With a wooden spoon, scoop the thick upper layer of kefir. Be careful not to scoop the kefir grains at the same time. Cut the avocado into halves and cook it on both sides in a hot pan for about a minute. Fry the quail’s eggs in olive oil. According to your taste, use other types of oil or butter. Fill the avocado halves with thick (creamy) kefir. Put the fried egg on the top. Add salt, pepper and a few drops of olive oil. You can serve avocado filled with kefir like it is or have bread with it.
