WHY MAKE KEFIR AT HOME?
Kefir is a traditional fermented beverage with numerous health benefits: but to get the best of it, it has to be fresh – and for this do-it-yourself preparation is the best.
Making kefir by yourself gives you the opportunity to enjoy all the richness and health benefits of the beverage. Since no preservatives are added, you have better control over the quality of your kefir. You can also tailor it to your own taste. You can make as much or as little of kefir as you need. Compared to the kefir you can buy in stores, the homemade beverage contains a much higher degree of kefir-specific active substances which are important for your health. By culturing and storing homemade milk kefir in a glass jar you will avoid unwanted exposure to BPA and other toxins from plastic. You will save money and create less waste.
Some researchers have also confirmed that homemade kefir contains many more beneficial cultures that store both.
“A team of four microbiology research students, who had no knowledge of kefir prior to their lab work, found 58 billion CFU (colony forming units) per cup of home brewed kefir. They found the CFUs of store brand kefir numbers comparable.”
They go on showing that difference is truly remarkable. In some cases, that difference was as high as 10 billion active living cultures. Some organic health brands are better, however, difference is still remarkable.
Microbiology students also researched probiotic yogurts under the supervision of Professor Monika Oli, Ph.D., Lecturer at the Department of Microbiology and Cell Science at the University of Florida. She said that
“Yogurt has barely any in it. Some are completely dead. It’s basically useless to eat commercial yogurt.”

There are also some straight forward benefits in making your own kefir. As the process is very simple and requires only two ingredients, milk and kefir grains, you can do it without much knowledge. Kefir grains are also a reusable culture, therefore, you only need to get them once. From that moment on, you will have bigger challenge on sharing extra grains as they grown.
